Here is how I dealt with my cockpit table.  It is made out of 3/4" cast plexi but you can make it out of anything you choose, standard bimini/dodger and boat table fittings.  I made it with a little drill press, a cordless circular saw, drill, router, jigsaw and tap & die set in the cockpit sitting on a mooring ball.  Every part is easily replaceable and the ability to set up a variety of table positions makes it comfortable for more people.  Meals- the whole table comes out, visiting- the single centre position, workbench- one side or the other, underway- no extensions and there is still a table around the binnacle.
